This is one of the best salads I ever made, even if it sounds like something on a TGI Friday’s menu. Since it isn’t tomato season yet I roasted some cherry tomatoes to get them sweet and caramelized and then I tossed them into the salad while they were still warm. The hot tomato insides also helped to dress the salad, kind of like a runny egg yolk does.
