Ingredients:

  • 1 cup cooked wheatberries
  • 1/2 of a small roasted chicken, shredded
  • 2 celery stalks, chopped
  • 1 carrot, diced
  • 1/4 cup of walnuts
  • 1/4 cup of raisins, chopped
  • lemon juice
  • olive oil
  • salt
  • pepper
  • parsley, chopped

Combine all ingredients into a bowl. Let sit for 15 minutes and then eat up.

Finally, the Salad Eater eats a salad! It may not be the prettiest salad in the world but it is a salad nonetheless…

I was getting sick of eating restaurant food and canned soup so I made the long journey to Fairway yesterday and stocked up on actual ingredients. Inspired by a suggestion by my friend Dawn I bought stuff to make a wheatberry salad. It was such a delicious melange! Crunchy from the celery and carrots, fresh tasting from the parsley and lemon, sweet from the raisins, nutty from the wheatberries and the walnuts, and umami-y from the roasted chicken. Overall a deeply satisfying meal for someone who is totally sick of winter.
